It's time to hide the good stuff!


My kids are just going through that phase where I cant tell them what food is in anything or the faces starting looking funny and frowning and turning away. Lorenzo used to eat everything and Gianluca has always been picky. Now Lorenzo follows Gianluca's lead so I got two fussy eaters. Lorenzo has especially refused most of his meals in the past few weeks. He is obsessed with chocolate and will chew around anything just to find the 1 chocolate chip I hide for him. (i am embarrassed to admit that as Gianluca did not have a piece of chocolate until well into his 3's)


Today I wanted to make soup....roasted pumpkin, squash, onions, turnips and pears. Poured a lot of cinnamon and pumpkin pie spice on top and then blended it up with vegetable soup. It was so delicious...almost tasted like pear sauce! Tried to get the boys to taste it and they would not even put it to their mouths.

Then I had the idea to mix it into applesauce since they love that. Lorenzo was eating away, but Gianluca must have seen me or detected the difference and pushed it away after the first bite...so guess who followed.

Now, I was stuck with two bowls of applesauce and pumpkin squash soup. I tried to make Gianluca have 6 bites, but forcing food never goes over well and after 3 bites he was miserable and I realized that that was just not the way.

So, I removed the plates, but there was no way I was throwing it away.

So out came the mixing bow. I put in my "sauce/soup mixture" Added 1 1/2 cups of mixed flour including almond meal, fargava, brown rice,chestnut and flax. Added 1/4 cup of agave, 1 tspn of baking soda, 1 tspn of apple cider vinegar, 1/4 cup coconut oil and into the oven they went. And just in case Lorenzo refused to try, I hid a 1/4 cup of mini choco chips in there...comes out to about 1-3 per muffin.

Out they came....and they've gobbled up 3 each. I must say, if you are thinking of making them, garfava and chestnut are stronger nutty flours and takes a few bites before deciding thumbs up or down. Also, they could actually use more agave, tastes more like bread than muffin; I was certain they wouldn't eat it, but hey, they loved it...this recipe is staying this way for me!

Honestly, those muffins are healthier than most things they get on a given day...outside of fresh fruits and vegetables which are the best for any diet. I've got the fruit thing down, but these kids won't eat fresh veggies...so hiding them it is! They just got a serving of fruit, vegetable, nuts, omega's, and beans for snack in this 1 muffin. Hi protein---very low sugar...Yay for me!!!
